Long Court Farm has been rearing turkeys for over ten years. The day old chicks are sourced from a renowned Norfolk breeder who has the only recognised pedigree stock in the country.
The traditional Norfolk Black, recognised by leading chefs, is once again being sought after for its superior flavour and texture. These slow maturing birds are carefully fed and allowed to hang for a minimum of seven days to really enhance their exquisite taste. This year we are trying two rare breeds in an attempt to raise breeding numbers, namely Bourborn Reds and Blues. With their characteristic nutty flavour and more fatted meat, we hope that an interest from customers will assist in removing these breeds from their rare status. Only very limited numbers are available this year. Available at Christmas, our Norfolk Black and Bronze turkeys are a world apart from the common white varieties! Cooking in their own fat, these old time favourites will transform your impression of it’s dull counterpart, found on many supermarket shelves.
Roaming the organic orchard, our birds benefit from the abundant windfalls and clover rich grass. Traditional hand plucking and finishing results in a superb looking and delicious centrepiece to the Christmas dining table. This traditional fare by royal decree is also available at Michelmas.
