Whether it is a traditional Downland cross from Long Court Farm or an exclusive Black Welsh Mountain from Herriard Park, you can be assured that the final product will be butchered and hung in the traditional manner to further enhance its fine flavour and texture. Additionally some of the Downland cross lambs are run on to the following year to provide the discerning customer the option of mutton, the favoured sheep meat until the 1940s, prized for its rich complexity of flavours and textures. We are supporters of the Prince Charles initiated Mutton Renaissance programme and supply recipe leaflets compiled by top chefs. Downland crosses are the result of the union between a Hampshire Down ram and a crossbred ewe. The Hampshire is a breed that matures naturally off grass and using this sire gives the excellent flavour associated with the breed without excessive fat. Indeed this is the lamb most favoured by traditional master butchers for its large carcass and good cuts. Supplied whole or half with legs and shoulders halved depending on size. Crown roasts, guards of honour, boned and rolled joints etc , can all be specified at minimal cost. For a truly traditional culinary experience, try the mutton. Hung for two weeks to improve texture and flavour, it tastes like sheep should! |
